Yeah, OSX is totally manageable remotely, just have to make sure ARD (Apple Remote Desktop) or VNC are turned on (VNC would be better, there’s clients for everything including iPhone).
It sounds like if we can only have one system in there, a newer-than-mine mini would be perfect. Turning it into OSX Server is literally a matter of $20 if you are running Lion or Mountain Lion, so that may be the way to go.
If we weren’t in the middle of buying a house, I’d just go ahead and get a new mini anyways, mine’s getting long in the tooth. I may just do it anyways. 😉
