I just got back from Kennedy- for work, so I’m not sure what we did that was public accessible vs. strings were pulled- and it IS pretty awesome. Be advised, it is a bit of a drive from the MCO area (45 minutes? but this was on a bus? YMMV. Literally.) If you go to KSC, make sure you splurge and get the behind the scenes tour- the VAB is just really neat to walk around in (NO BIKES, Y’ALL, THEY MEAN IT) and there’s probably going to still be at least one shuttle (Atlantis or Endeavor) in the OPF by February (Atlantis may be in it’s new home at the KSC visitors center by then). The Shuttle Launch Experience is worth doing, mostly because the introduction stars Charlie Bolden being his charming, dorky astronaut self.
Also, if you’re a nature nerd, there’s alligators, osprey, wild boar, snakes, a million different shore birds, and a bald eagle nest the size of an upside down Volkswagen.
