Given enough time and enough budget, I could probably make a multi-piece Companion Cube ice cube mold that would solve the undercut dilemma. From a design perspective, it’s fairly simple. Whether or not I could scale it down to normal ice-cube size and retain mold functionality is a completely different barrel of anacondas.
I have neither at the moment.
