I remembered reading something about this on Lifehacker recently — they featured Call Graph. CoolJammer may be able to tell you something about it, but I’ve never used it.
[By the way, if recording quality is going to be an issue, here‘s a podcaster talking about how he records Skype calls. His instructions are for Macs, but the idea translates neatly into Windows tools too, I think. Basically, it works like this: Since recording a Skype conversation usually results in your own voice being clear but the other voice being less so, have both you and the person at the other end of the line record the call. Then you go through and edit the two tracks together — he uses GarageBand for Macs, but Audacity can do the same kind of stuff. It sounds like a bit of a hassle, but if sound quality is important to you, you might give that a try.]
